Highlights
• Βacterial Cellulose (BC) can adsorbed onto the WPI-coated emulsions and form a second layer.
• Stable emulsions were obtained due to either steric stabilization or network formation of BC fibrils.
• BC could act as a cheaper alternative thickener for o/w emulsions.
